Description

Tuna Salad Boats are a delicious and healthy handheld meal, made with fresh veggies filled with scrumptious tuna salad.


Ingredients

Scale
  • 1 can Tuna (packed in water or oil)
  • 2 tablespoons Greek Yogurt or Mayo
  • 1 teaspoon Dijon Mustard (optional)
  • 1 stalk Celery (diced)
  • 1 Red Onion (finely chopped)
  • Salt and Pepper (to taste)
  • Bell Peppers or Cucumbers (for serving)


Instructions

  1. Drain the canned tuna and place it in a mixing bowl.
  2. Add Greek yogurt or mayo, Dijon mustard, diced celery, and red onion. Season with salt and pepper to taste.
  3. Mix until all ingredients are well combined.
  4. Cut bell peppers in half lengthwise or slice cucumbers into thick rounds. Scoop out seeds if using bell peppers.
  5. Fill the veggie boats with the tuna mixture and serve.

Notes

For added flavor, let the tuna salad chill in the fridge for about 30 minutes before filling the boats.
