Tuna Salad Boats are a delicious and healthy handheld meal, made with fresh veggies filled with scrumptious tuna salad.
Ingredients

- 1 can Tuna (packed in water or oil)
- 2 tablespoons Greek Yogurt or Mayo
- 1 teaspoon Dijon Mustard (optional)
- 1 stalk Celery (diced)
- 1 Red Onion (finely chopped)
- Salt and Pepper (to taste)
- Bell Peppers or Cucumbers (for serving)
Instructions
- Drain the canned tuna and place it in a mixing bowl.
- Add Greek yogurt or mayo, Dijon mustard, diced celery, and red onion. Season with salt and pepper to taste.
- Mix until all ingredients are well combined.
- Cut bell peppers in half lengthwise or slice cucumbers into thick rounds. Scoop out seeds if using bell peppers.
- Fill the veggie boats with the tuna mixture and serve.
Notes
For added flavor, let the tuna salad chill in the fridge for about 30 minutes before filling the boats.
