- 2 lbs Beef Chuck, cut into bite-sized pieces
- 4 medium Yukon Gold Potatoes, diced
- 3 large Carrots, chopped
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 4 cups Beef Broth
- 2 tablespoons Tomato Paste
- 1 teaspoon Dried Thyme
- 2 Bay Leaves
- Salt and Pepper to taste
- 2 tablespoons Olive Oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, and sauté until browned on all sides.
- Remove the beef from the pot and set aside. In the same pot, add chopped onions, carrots, and garlic; cook until softened, about 5 minutes.
- Add the beef broth and stir in the tomato paste, scraping the bottom of the pot to release any browned bits.
- Return the beef to the pot, add diced potatoes, thyme, and bay leaves. Stir well, taste, and adjust seasoning.
- Cover and let simmer on low heat for 1.5 to 2 hours, stirring occasionally.
- When thick and bubbling, serve hot, garnished with fresh herbs if desired.
Notes
Serve with crusty bread or over creamy mashed potatoes for a cozy meal. Adjust seasoning gradually to taste.
