Description

A hearty and comforting traditional beef stew made with tender beef, vegetables, and a flavorful broth. Perfect for chilly nights!


Ingredients

  • 2 lbs Beef Chuck, cut into bite-sized pieces
  • 4 medium Yukon Gold Potatoes, diced
  • 3 large Carrots, chopped
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef Broth
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Dried Thyme
  • 2 Bay Leaves
  • Salt and Pepper to taste
  • 2 tablespoons Olive Oil


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, and sauté until browned on all sides.
  2. Remove the beef from the pot and set aside. In the same pot, add chopped onions, carrots, and garlic; cook until softened, about 5 minutes.
  3. Add the beef broth and stir in the tomato paste, scraping the bottom of the pot to release any browned bits.
  4. Return the beef to the pot, add diced potatoes, thyme, and bay leaves. Stir well, taste, and adjust seasoning.
  5. Cover and let simmer on low heat for 1.5 to 2 hours, stirring occasionally.
  6. When thick and bubbling, serve hot, garnished with fresh herbs if desired.

Notes

Serve with crusty bread or over creamy mashed potatoes for a cozy meal. Adjust seasoning gradually to taste.
