Description

Delightful crinkle cookies that combine rich chocolate and coffee flavors reminiscent of classic tiramisu.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup espresso or strong coffee
  • 1 cup mascarpone cheese
  • 1 cup powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until fluffy and light in color.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and brewed espresso or coffee.
  5. Gradually mix in the dry ingredients until well-combined to form a thick, gooey dough.
  6. Gently fold in the mascarpone cheese until fully integrated.
  7. Scoop out dough balls, roll them in powdered sugar, and place on prepared baking sheets, spacing them out.
  8. Bake for 10 to 12 minutes; they will firm up as they cool.
  9. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough if it’s too sticky. Don’t overmix once you add the flour to keep cookies tender.
