Delightful crinkle cookies that combine rich chocolate and coffee flavors reminiscent of classic tiramisu.

- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup espresso or strong coffee
- 1 cup mascarpone cheese
- 1 cup powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until fluffy and light in color.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and brewed espresso or coffee.
- Gradually mix in the dry ingredients until well-combined to form a thick, gooey dough.
- Gently fold in the mascarpone cheese until fully integrated.
- Scoop out dough balls, roll them in powdered sugar, and place on prepared baking sheets, spacing them out.
- Bake for 10 to 12 minutes; they will firm up as they cool.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough if it’s too sticky. Don’t overmix once you add the flour to keep cookies tender.
