A cozy, hearty soup combining all the flavors of your favorite tacos with a comforting soup base.
Ingredients

- 1 lb Ground Beef or Turkey
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Bell Pepper, chopped
- 1 can (14.5 oz) Diced Tomatoes
- 1 can (15 oz) Black Beans, drained and rinsed
- 1 cup Corn
- 2 tbsp Taco Seasoning
- 4 cups Chicken or Vegetable Broth
- Cheese and Sour Cream, for topping
Instructions
- In a large pot, brown 1 pound of ground meat over medium heat, breaking it up as it cooks.
- Add 1 chopped onion and 2 cloves of minced garlic, and sauté until softened.
- Stir in 1 chopped bell pepper and cook for another 3-4 minutes until tender.
- Pour in 1 can of diced tomatoes (with juice), 1 can of black beans (drained and rinsed), and 1 cup of corn.
- Add 2 tablespoons of taco seasoning and 4 cups of broth, then give it a good stir!
- Bring the soup to a boil, reduce heat, and let it simmer for 20-30 minutes.
- Top with cheese, sour cream, and other toppings as desired before serving.
Notes
Adjust the spice level or make it vegan by swapping the meat for lentils or chickpeas.
