Description

A cozy, hearty soup combining all the flavors of your favorite tacos with a comforting soup base.


Ingredients

Scale
  • 1 lb Ground Beef or Turkey
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Bell Pepper, chopped
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 can (15 oz) Black Beans, drained and rinsed
  • 1 cup Corn
  • 2 tbsp Taco Seasoning
  • 4 cups Chicken or Vegetable Broth
  • Cheese and Sour Cream, for topping


Instructions

  1. In a large pot, brown 1 pound of ground meat over medium heat, breaking it up as it cooks.
  2. Add 1 chopped onion and 2 cloves of minced garlic, and sauté until softened.
  3. Stir in 1 chopped bell pepper and cook for another 3-4 minutes until tender.
  4. Pour in 1 can of diced tomatoes (with juice), 1 can of black beans (drained and rinsed), and 1 cup of corn.
  5. Add 2 tablespoons of taco seasoning and 4 cups of broth, then give it a good stir!
  6. Bring the soup to a boil, reduce heat, and let it simmer for 20-30 minutes.
  7. Top with cheese, sour cream, and other toppings as desired before serving.

Notes

Adjust the spice level or make it vegan by swapping the meat for lentils or chickpeas.
