- 2 packages Instant Ramen Noodles
- 1 Red Bell Pepper, sliced
- 1 Yellow Bell Pepper, sliced
- 2 Carrots, thinly sliced
- 4 Green Onions, chopped
- 1/4 cup Soy Sauce
- 2 tbsp Honey or Maple Syrup
- 1-2 tbsp Sriracha or Chili Sauce
- 2 cloves Garlic, minced
- 1 tbsp Sesame Oil
Instructions
- Cook the Noodles: In a pot of boiling water, cook the ramen noodles according to package instructions. Drain and set aside.
- Sauté the Veggies: In a large wok or skillet, heat a drizzle of sesame oil over medium heat. Add the bell peppers, carrots, and a pinch of salt. Stir-fry for about 3-4 minutes, until they are tender yet still crisp.
- Prepare the Sauce: In a small bowl, mix soy sauce, honey (or maple syrup), sriracha, and minced garlic until well combined.
- Combine Everything: Add the drained noodles to the skillet with the veggies. Pour the sauce over the noodles and toss everything together, cooking for another 2 minutes.
- Garnish: Finally, add chopped green onions to the mix and give it a final toss. Serve hot!
