Instructions
- Preheat your oven to 350°F (175°C) and bake the pie crust until golden brown. Let it cool.
- In a saucepan, whisk together sugar, cornstarch, and lemon juice. Cook over medium heat until thickened, then remove from heat and mix in butter and egg yolks.
- In a large bowl, beat the egg whites with cream of tartar until soft peaks form, then gradually add sugar until stiff peaks form.
- Pour the lemon filling into the baked pie crust and top with meringue, sealing the edges.
- Bake the pie again for 10-15 minutes until the meringue is lightly browned.
