Instructions
- Preheat oven to 350°F (175°C).
- Cream together the softened butter and brown sugar until light and fluffy.
- Add the egg and vanilla, mixing until combined.
- In a food processor, blend pitted dates into a sticky paste and fold into the mixture.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually combine dry and wet mixtures until just incorporated.
- Scoop dough onto lined baking sheets and bake for 10-12 minutes until golden brown.
