Description

Deliciously soft and chewy cookies made primarily with dates, offering a healthier alternative to traditional treats.

Ingredients

Scale
  • 1 cup pitted Medjool dates
  • 1/2 cup unsalted butter (or coconut oil)
  • 1/2 cup brown sugar
  • 1 egg (or flax egg for vegan option)
  • 1 1/2 cups all-purpose flour (or oat flour for gluten-free)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together the softened butter and brown sugar until light and fluffy.
  3. Add the egg and vanilla, mixing until combined.
  4. In a food processor, blend pitted dates into a sticky paste and fold into the mixture.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually combine dry and wet mixtures until just incorporated.
  7. Scoop dough onto lined baking sheets and bake for 10-12 minutes until golden brown.
  8. Cool on a wire rack before serving.

Notes

Use quality Medjool dates for the best flavor. Don’t overmix the dough for softer cookies.
