Description

A vibrant dish showcasing the rich, tangy flavor of sun-dried tomatoes, perfect for both weeknight dinners and special occasions.

Ingredients

  • Pasta: Any type (spaghetti, penne, or fusilli)
  • Sun-Dried Tomatoes: Jarred in oil or dried
  • Olive Oil: Good quality
  • Garlic: Fresh or minced
  • Fresh Basil: For freshness
  • Parmesan Cheese: Grated
  • Salt and Pepper: To taste

Instructions

  1. Cook the Pasta: Boil salted water, add pasta, and cook until al dente. Drain, saving a bit of pasta water.
  2. Sauté the Garlic: Heat olive oil, add minced garlic, and sauté for about a minute until fragrant.
  3. Add the Sun-Dried Tomatoes: Cook for a couple of minutes to enhance their flavor.
  4. Combine the Pasta: Mix in the drained pasta with the garlic and sun-dried tomatoes.
  5. Mix in the Cheese and Basil: Stir in grated Parmesan and fresh basil, adding reserved pasta water if desired.
  6. Season to Taste: Add salt and pepper, stir well, and serve.

Notes

Don’t overcook the pasta for the best texture. You can customize with proteins or herbs as desired.
