Description

Delicious sugar-free chocolate chip cookies made with natural sweeteners, perfect for a guilt-free treat.


Ingredients

  • 2 cups almond flour
  • 1/2 cup coconut oil (melted)
  • 2 large eggs
  • 1/2 cup sugar substitute (monk fruit sweetener or erythritol)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup sugar-free chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the almond flour, baking soda, and sugar substitute until evenly combined.
  3. In another bowl, mix the melted coconut oil, eggs, and vanilla extract until smooth.
  4. Slowly add the dry mixture to the wet mixture, stirring until just combined.
  5. Gently mix in the chocolate chips.
  6. Scoop the dough onto the prepared baking sheet, leaving space for spreading.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

For chewier cookies, let the dough chill in the fridge for about 30 minutes before baking.
