- 1/2 cup sugar substitute (monk fruit sweetener or erythritol)
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 cup sugar-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the almond flour, baking soda, and sugar substitute until evenly combined.
- In another bowl, mix the melted coconut oil, eggs, and vanilla extract until smooth.
- Slowly add the dry mixture to the wet mixture, stirring until just combined.
- Gently mix in the chocolate chips.
- Scoop the dough onto the prepared baking sheet, leaving space for spreading.
- Bake for 10-12 minutes or until the edges are golden.
- Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
Notes
For chewier cookies, let the dough chill in the fridge for about 30 minutes before baking.
