- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar (divided)
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups fresh strawberries, sliced
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, ¼ cup sugar, and melted butter. Press into the bottom of a springform pan and bake for 8-10 minutes. Let cool.
- For the strawberry sauce, combine sliced strawberries and remaining ¼ cup sugar in a saucepan. Cook over medium heat until the strawberries break down. Let cool.
- In another bowl, beat cream cheese until smooth. Add remaining sugar, sour cream, eggs, and vanilla extract, mixing until incorporated.
- Pour half of the cheesecake filling into the cooled crust. Drizzle half of the strawberry sauce on top and swirl gently. Repeat with remaining filling and sauce.
- Bake for 50-60 minutes until edges are set and center slightly jiggles. Let cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
Use room temperature ingredients for a smoother filling. Bake in a water bath for best results and consider chilling overnight for deeper flavor.
