- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 4 large eggs
- 1 cup milk (or almond milk)
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup fresh strawberries, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch sheet pan and line the bottom with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside while you mix the wet ingredients.
- In another bowl, whisk the granulated sugar and eggs until light and frothy. Then, add in the milk, vegetable oil, and vanilla extract.
- Slowly add the dry ingredients into the wet mixture. Mix until just combined.
- Gently fold in the chopped fresh strawberries.
- Pour everything into your prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Let it cool completely before frosting.
Notes
For an extra treat, top with whipped cream or a scoop of vanilla ice cream. Fresh mint leaves enhance the flavor.
