- 2 1/2 cups All-Purpose Flour
- 2 1/2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1 cup Unsalted Butter, at room temperature
- 1 1/2 cups Granulated Sugar
- 4 Eggs
- 1 cup Milk
- 1/2 cup Fresh Lemon Juice
- Zest of 2 Fresh Lemons
- 2 cups Strawberries, sliced
- 2 cups Powdered Sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease your cake pans and line them with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing in the milk and lemon juice.
- Gradually add the dry ingredients, mixing just until combined. Divide the batter among prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- While the cakes are cooling, beat together the butter and powdered sugar for the frosting. Add lemon juice and zest for flavor; adjust consistency with milk if needed.
- Once the cakes have cooled, spread frosting on each layer, adding sliced strawberries in between layers. Frost the sides and top, decorating with additional strawberries if desired.
Notes
Ensure butter is at room temperature for a smooth batter. Let cakes cool completely before frosting.
