Ingredients

- 1 lb flank or sirloin steak
- 2 ripe avocados, sliced
- 2 ears of fresh corn, kernels cut off
- 1 cup diced bell peppers (red and yellow)
- 1 small red onion, sliced
- Juice of 1 lime
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season the steak with salt and pepper. Heat a skillet over medium-high heat and sear the steak for 3-4 minutes per side for medium-rare. Let it rest and slice into strips.
- In the same skillet, add olive oil and toss the corn, cooking until charred and golden, around 5-7 minutes.
- Dice the bell peppers and slice the red onion. Sauté in the same skillet if desired or keep fresh.
- In a large bowl, layer the steak, roasted corn, bell peppers, avocado slices, and onions.
- Drizzle with lime juice and olive oil. Season with additional salt and pepper to taste. Toss lightly to combine.
- Serve warm or chill for a refreshing salad version.
