Description

A vibrant bowl featuring juicy steak, creamy avocado, and sweet roasted corn, creating a balanced meal in one dish.


Ingredients

Scale
  • 1 lb flank or sirloin steak
  • 2 ripe avocados, sliced
  • 2 ears of fresh corn, kernels cut off
  • 1 cup diced bell peppers (red and yellow)
  • 1 small red onion, sliced
  • Juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Season the steak with salt and pepper. Heat a skillet over medium-high heat and sear the steak for 3-4 minutes per side for medium-rare. Let it rest and slice into strips.
  2. In the same skillet, add olive oil and toss the corn, cooking until charred and golden, around 5-7 minutes.
  3. Dice the bell peppers and slice the red onion. Sauté in the same skillet if desired or keep fresh.
  4. In a large bowl, layer the steak, roasted corn, bell peppers, avocado slices, and onions.
  5. Drizzle with lime juice and olive oil. Season with additional salt and pepper to taste. Toss lightly to combine.
  6. Serve warm or chill for a refreshing salad version.
