- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 8 oz cream cheese
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- In a skillet, heat a drizzle of olive oil over medium heat. Add fresh spinach and minced garlic, cooking until the spinach is wilted. Remove from heat and let cool slightly, then mix in cream cheese and Parmesan until combined.
- Carefully create a pocket in each chicken breast using a sharp knife without cutting all the way through.
- Generously fill each pocket with the spinach mixture and secure with toothpicks if needed.
- Heat more olive oil in a skillet over medium-high heat, and sear the stuffed chicken breasts for about 5 minutes on each side until golden brown.
- Transfer the chicken to a preheated oven at 375°F and bake for 20-25 minutes or until internal temperature reaches 165°F.
- Let the chicken rest for a few minutes before serving.
Notes
Serve with fresh salad, roasted veggies, or garlic mashed potatoes for a complete meal. Leftovers can be stored in the fridge.
