- 1 pound shrimp, peeled and deveined
- 8 small corn or flour tortillas
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- ½ teaspoon cayenne pepper
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup red cabbage, finely shredded
- 1 ripe avocado, sliced
- Sour cream or Greek yogurt for drizzling
Instructions
- In a bowl, combine shrimp, olive oil, lime juice, garlic powder, cayenne, cumin, salt, and pepper. Toss to coat well and let marinate for 15-20 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Skewer the shrimp or place directly on the grill. Grill for 2-3 minutes per side until they turn pink and opaque.
- Quickly warm tortillas on a dry skillet for about 30 seconds on each side until soft.
- Assemble the tacos by placing grilled shrimp in each tortilla and topping with shredded cabbage, avocado slices, and a drizzle of sour cream or yogurt.
- Squeeze fresh lime juice over the top and enjoy!
