Description

Delightful and tender Southern tea cake cookies, perfect for pairing with tea or coffee.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well blended.
  5. Gradually add the dry mixture to the wet ingredients, mixing slowly to prevent flour explosions.
  6. Use a tablespoon to drop cookies onto a baking sheet lined with parchment paper, leaving space between them.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For variations, feel free to add chocolate chips, chopped nuts, or dried fruits. Store cookies in an airtight container to maintain freshness.
