Description
A wonderfully moist and flavorful coffee cake that combines the rich taste of pumpkin with the tangy notes of sourdough, finished with warm spices.

- 2 cups all-purpose flour
- 1 cup sourdough starter
- 1 cup pumpkin puree
- 1 cup brown sugar
- 2 eggs
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the flour, baking powder, baking soda, salt, and spices. Set aside.
- In a large mixing bowl, whisk together the pumpkin puree, sourdough starter, brown sugar, and eggs until smooth.
- Slowly fold in the dry ingredients into the wet mixture.
- Grease a 9×13 inch baking dish and pour the batter in, spreading it evenly.
- If using, mix together flour, brown sugar, and nuts for the crumble and sprinkle over the batter.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool in the pan before slicing and serve.
Notes
Serve warm with whipped cream or a drizzle of maple syrup. For a healthier option, pair with Greek yogurt.
