- 1 pound fresh green beans, trimmed and cut into bite-sized pieces
- 1 cup sour cream
- 1 can cream of mushroom soup
- 1/2 cup chopped onion
- 1 cup fried onions
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Bring a pot of salted water to a boil and blanch the green beans for 5 minutes, then drain and set aside.
- In a large bowl, combine sour cream, cream of mushroom soup, garlic powder, chopped onion, and season with salt and pepper.
- Add the blanched green beans to the sauce mixture and stir until everything is coated.
- Pour the mixture into a greased casserole dish.
- Sprinkle fried onions generously on top.
- Bake for about 25-30 minutes until bubbly and golden.
Notes
For a lighter version, you can substitute sour cream with Greek yogurt. You can also make the casserole a day in advance.
