Description

Delicious, soft, and chewy bars filled with dried cranberries and topped with velvety cream cheese frosting, perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup dried cranberries
  • 1 tsp orange zest
  • 8 oz cream cheese, softened
  • 1 1/2 cups powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just incorporated.
  5. Gently fold in the dried cranberries and orange zest.
  6. Pour the batter into your prepared baking dish, using a spatula to even it out.
  7. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely.
  8. In a bowl, beat together the cream cheese and powdered sugar until smooth and fluffy.
  9. Once the bars are cool, spread the cream cheese frosting evenly over the top.
  10. Cut into squares or bars, and enjoy!

Notes

For best results, use room temperature ingredients and be careful not to overmix the batter.
