- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup dried cranberries
- 1 tsp orange zest
- 8 oz cream cheese, softened
- 1 1/2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just incorporated.
- Gently fold in the dried cranberries and orange zest.
- Pour the batter into your prepared baking dish, using a spatula to even it out.
- Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely.
- In a bowl, beat together the cream cheese and powdered sugar until smooth and fluffy.
- Once the bars are cool, spread the cream cheese frosting evenly over the top.
- Cut into squares or bars, and enjoy!
Notes
For best results, use room temperature ingredients and be careful not to overmix the batter.
