Description

Ingredients

  • 4 chicken thighs or breasts
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried)
  • Salt to taste
  • Pepper to taste
  • Vegetables (like potatoes or carrots), optional


Instructions

  1. Season the chicken pieces with salt and pepper and trim any excess fat if needed.
  2. In a bowl, combine olive oil, lemon juice, minced garlic, and herbs, and whisk together.
  3. Place the chicken in the slow cooker and pour the marinade over it, adding veggies if using.
  4. Cover the slow cooker and set it to cook on low for 6-8 hours or high for 4 hours.
  5. Check that the chicken has reached an internal temperature of 165°F. Serve or shred as desired.
