Instructions
- Season the chicken pieces with salt and pepper and trim any excess fat if needed.
- In a bowl, combine olive oil, lemon juice, minced garlic, and herbs, and whisk together.
- Place the chicken in the slow cooker and pour the marinade over it, adding veggies if using.
- Cover the slow cooker and set it to cook on low for 6-8 hours or high for 4 hours.
