A cozy, one-pot meal featuring tender chicken thighs slow-cooked with garlic, butter, and a colorful array of fresh vegetables.
Ingredients

- 1.5 lbs chicken thighs
- 1/2 cup butter
- 4 cloves garlic, minced
- 2 large carrots, chopped
- 2 bell peppers, chopped
- 1 onion, chopped
- 1 cup chicken broth
- Salt and pepper to taste
- 1 tsp thyme or rosemary (optional)
Instructions
- Chop your carrots, bell peppers, and onion into bite-sized pieces.
- Place the veggies in the bottom of the slow cooker.
- Nestle the chicken thighs on top of the veggies.
- In a microwave-safe bowl, melt the butter and stir in the minced garlic.
- Drizzle the garlic butter over the chicken and veggies.
- Pour the chicken broth around the sides of the chicken and season everything well.
- Set your slow cooker to low for 6-8 hours or high for 3-4 hours.
- Once done, shred the chicken if you like and mix everything together.
Notes
For added flavor, consider adding a splash of white wine to the broth.
