Description

A cozy, one-pot meal featuring tender chicken thighs slow-cooked with garlic, butter, and a colorful array of fresh vegetables.


Ingredients

Scale
  • 1.5 lbs chicken thighs
  • 1/2 cup butter
  • 4 cloves garlic, minced
  • 2 large carrots, chopped
  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1 tsp thyme or rosemary (optional)


Instructions

  1. Chop your carrots, bell peppers, and onion into bite-sized pieces.
  2. Place the veggies in the bottom of the slow cooker.
  3. Nestle the chicken thighs on top of the veggies.
  4. In a microwave-safe bowl, melt the butter and stir in the minced garlic.
  5. Drizzle the garlic butter over the chicken and veggies.
  6. Pour the chicken broth around the sides of the chicken and season everything well.
  7. Set your slow cooker to low for 6-8 hours or high for 3-4 hours.
  8. Once done, shred the chicken if you like and mix everything together.

Notes

For added flavor, consider adding a splash of white wine to the broth.
