Ingredients

- 2 lbs boneless skinless chicken thighs
- 3 carrots, chopped
- 4 Yukon Gold potatoes, diced
- 1 onion, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Chop the chicken, veggies, and garlic.
- Layer the ingredients in the slow cooker, starting with chicken at the bottom.
- Pour in enough chicken broth to cover the ingredients.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Taste and adjust seasoning before serving.
Notes
For extra flavor, brown the chicken in a pan before adding it to the slow cooker. For a thicker stew, add a cornstarch slurry in the last 30 minutes of cooking.
