Description

A comforting and hearty one-pot meal of slow cooker chicken stew, packed with tender chicken, vibrant veggies, and a rich broth.


Ingredients

Scale
  • 2 lbs boneless skinless chicken thighs
  • 3 carrots, chopped
  • 4 Yukon Gold potatoes, diced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste


Instructions

  1. Chop the chicken, veggies, and garlic.
  2. Layer the ingredients in the slow cooker, starting with chicken at the bottom.
  3. Pour in enough chicken broth to cover the ingredients.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Taste and adjust seasoning before serving.

Notes

For extra flavor, brown the chicken in a pan before adding it to the slow cooker. For a thicker stew, add a cornstarch slurry in the last 30 minutes of cooking.
