Ingredients
- Smoked sausages (or chicken/turkey sausages)
- Sweet potatoes
- Bell peppers (mixed colors)
- Yellow onion
- Honey
- Garlic
- Olive oil
- Salt
- Pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Chop sweet potatoes, bell peppers, and onion into bite-sized pieces. Cut sausage into large chunks.
- Whisk together honey, minced garlic, salt, and pepper in a bowl. Add a splash of olive oil.
- Spread sweet potatoes, sausage, bell peppers, and onion on a baking sheet. Drizzle with honey garlic sauce and toss to coat.
- Roast in the oven for 25-30 minutes until potatoes are tender and sausage is golden brown, shaking halfway through.
