Description

Ingredients

  • Smoked sausages (or chicken/turkey sausages)
  • Sweet potatoes
  • Bell peppers (mixed colors)
  • Yellow onion
  • Honey
  • Garlic
  • Olive oil
  • Salt
  • Pepper


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop sweet potatoes, bell peppers, and onion into bite-sized pieces. Cut sausage into large chunks.
  3. Whisk together honey, minced garlic, salt, and pepper in a bowl. Add a splash of olive oil.
  4. Spread sweet potatoes, sausage, bell peppers, and onion on a baking sheet. Drizzle with honey garlic sauce and toss to coat.
  5. Roast in the oven for 25-30 minutes until potatoes are tender and sausage is golden brown, shaking halfway through.
  6. Serve hot, optionally garnished with fresh herbs.
