Description

A comforting medley of sausage, vibrant veggies, and crushed tomatoes cooked in a crockpot for a hearty meal.


Ingredients

  • Sausage (Italian, chorizo, or turkey)
  • Bell Peppers (mixed colors)
  • Onion (yellow or red)
  • Garlic (fresh or powder)
  • Crushed Tomatoes (canned or homemade)
  • Salt
  • Pepper
  • Italian Herbs (oregano, basil, etc.)
  • Chili Flakes (optional)


Instructions

  1. Brown the sausage in a skillet for a few minutes (optional).
  2. Chop the bell peppers and onions into rustic chunks.
  3. Combine the sausage, veggies, garlic, and crushed tomatoes in the crockpot. Season with salt, pepper, and Italian herbs.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. After cooking, stir the mixture and serve hot, optionally garnished with fresh parsley.
