- 1 package frozen hashbrowns
- 1 pound ground sausage
- 6 eggs
- 1 cup milk
- 2 cups cheddar cheese, shredded
- 1 onion, diced
- 1 bell pepper, diced
- Salt and pepper to taste

- Onion powder (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the sausage in a skillet over medium heat until browned, then set aside.
- Sauté the onion and bell pepper in the same skillet until soft, about 4-5 minutes.
- In a large bowl, whisk together the eggs and milk until fluffy. Add salt, pepper, and other spices.
- In a greased baking dish, layer the hashbrowns, cooked sausage, and sautéed veggies. Pour the egg mixture evenly over everything.
- Sprinkle with cheddar cheese.
- Bake for about 45-55 minutes, or until the casserole is set and the top is golden brown.
- Let cool for a few minutes before slicing and serving.
