- 1 cup honey (high-quality, floral variety)
- ½ cup heavy cream
- 3 large eggs
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- ½ teaspoon sea salt (plus extra for garnish)
- Optional: fresh herbs for garnish (like thyme or lavender)
Instructions
- Preheat your oven to 350°F (175°C). If using a homemade crust, roll it out and place it in a pie dish, crimping the edges. For a store-bought crust, fit it into the dish and poke a few holes.
- In a medium saucepan over low heat, warm the honey until it becomes thinner. Do not let it simmer.
- Remove the honey from heat and let it cool slightly.
- In a bowl, whisk together the eggs, cornstarch, heavy cream, vanilla extract, and sea salt until well combined.
- Slowly drizzle in the warmed honey, stirring continuously until smooth.
- Pour the filling into the prepared pie crust.
- Bake for 40-45 minutes until the edges are set but the center has a slight jiggle.
- Allow the pie to cool completely before serving. Chill in the fridge for a few hours for best results.
- Sprinkle a pinch of sea salt over the top before serving.
