Description

Ingredients

  • 1 pie crust (store-bought or homemade)
  • 1 cup honey (high-quality, floral variety)
  • ½ cup heavy cream
  • 3 large eggs
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt (plus extra for garnish)
  • Optional: fresh herbs for garnish (like thyme or lavender)


Instructions

  1. Preheat your oven to 350°F (175°C). If using a homemade crust, roll it out and place it in a pie dish, crimping the edges. For a store-bought crust, fit it into the dish and poke a few holes.
  2. In a medium saucepan over low heat, warm the honey until it becomes thinner. Do not let it simmer.
  3. Remove the honey from heat and let it cool slightly.
  4. In a bowl, whisk together the eggs, cornstarch, heavy cream, vanilla extract, and sea salt until well combined.
  5. Slowly drizzle in the warmed honey, stirring continuously until smooth.
  6. Pour the filling into the prepared pie crust.
  7. Bake for 40-45 minutes until the edges are set but the center has a slight jiggle.
  8. Allow the pie to cool completely before serving. Chill in the fridge for a few hours for best results.
  9. Sprinkle a pinch of sea salt over the top before serving.
