Description

A comforting dish of roasted chicken infused with garlic paired with caramelized vegetables for a deliciously easy meal.


Ingredients

  • 4 chicken thighs or breasts
  • 6 garlic cloves, minced
  • 2 cups baby potatoes, halved
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare your ingredients by mincing the garlic and chopping the vegetables into bite-sized pieces.
  3. In a large bowl, combine the chicken, garlic, potatoes, carrots, zucchini, olive oil, salt, and pepper.
  4. Arrange everything on a baking sheet in a single layer.
  5. Roast for about 25-30 minutes or until the chicken is cooked through and the veggies are tender.
  6. Serve immediately, optionally with a squeeze of lemon juice on top.

Notes
