- 1 cup Almond Flour

- 2 Eggs

Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the ricotta cheese, almond flour, sugar, and one egg. Mix until creamy.
- In a separate bowl, mix flour, sugar, remaining eggs, and salt until a dough forms.
- On a floured surface, roll out your dough until 1/8-inch thick.
- Use a round cookie cutter to cut circles from the dough, about 3 inches in diameter.
- Place a small spoonful of the ricotta mixture in the center of each circle.
- Gently fold the dough over and press the edges with a fork to seal.
- Place the filled pillows on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
- Dust with powdered sugar before serving.
Notes
