Description

Ricotta almond pillows are tender pastries filled with a creamy ricotta cheese mixture and infused with warm almond flavor, perfect for satisfying sweet cravings.


Ingredients

  • 1 cup Ricotta Cheese
  • 1 cup Almond Flour
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • Powdered Sugar for dusting


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the ricotta cheese, almond flour, sugar, and one egg. Mix until creamy.
  3. In a separate bowl, mix flour, sugar, remaining eggs, and salt until a dough forms.
  4. On a floured surface, roll out your dough until 1/8-inch thick.
  5. Use a round cookie cutter to cut circles from the dough, about 3 inches in diameter.
  6. Place a small spoonful of the ricotta mixture in the center of each circle.
  7. Gently fold the dough over and press the edges with a fork to seal.
  8. Place the filled pillows on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
  9. Dust with powdered sugar before serving.
