- 1 tbsp Baking Powder
- 1/4 tsp Salt
- 1 cup Milk (dairy or plant-based)
- 1 Egg (or flax egg for vegan)
- 2 tbsp Vegetable Oil or Melted Butter
- 1 tbsp Red Food Coloring
- 1 tsp Vanilla Extract
- Cream Cheese (for topping)
Instructions
- In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt until well combined.
- In another bowl, whisk together the milk, egg, oil, red food coloring, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir until just combined. Don’t overmix; some lumps are perfectly okay!
- Lightly grease a skillet or griddle over medium heat.
- Pour about a quarter cup of batter onto the skillet. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.
- Stack the pancakes high on a plate and top with whipped cream or a cream cheese mixture.
Notes
Ensure not to overmix the batter; lumpy batter yields fluffier pancakes. Check your skillet temperature to prevent burning.
