Ingredients

- 1 lb lean ground beef
- 1 cup bread crumbs
- 1 egg
- 1 cup 100% red grape juice
- 1 small onion, minced
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
- 1 tsp Italian herbs (oregano or basil)
- 2 tbsp olive oil
Instructions
- In a large bowl, combine ground beef, bread crumbs, egg, minced onion, minced garlic, salt, pepper, and herbs. Mix well.
- Roll the mixture into small meatballs, about the size of a golf ball.
- Heat olive oil in a large skillet over medium-high heat and brown the meatballs on all sides.
- Pour red grape juice into the skillet, scraping up any bits from the bottom. Let it come to a gentle simmer.
- Reduce heat, cover, and let the meatballs braise for 20-25 minutes.
- Serve over your favorite pasta or with bread to soak up the sauce.
Notes
Don’t overmix the meatball ingredients to keep them tender. You can experiment with different meat options or add crushed red pepper for extra spice.
