Ingredients
- Bell Peppers (red, yellow, or green)
- Zucchini
- Red Onion (or yellow onion)
- Cherry Tomatoes (or grape tomatoes)
- Olive Oil
- Goat Cheese (crumbled; substitute with feta if desired)
- Balsamic Vinegar (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Chop the bell peppers, zucchini, red onion, and cherry tomatoes into bite-sized pieces.
- Toss the chopped vegetables in a large bowl with a splash of olive oil until coated.
- Season with salt, pepper, and herbs like thyme or rosemary.
- Spread the veggies on a baking sheet in a single layer and roast for 20–25 minutes, stirring halfway through.
- Once softened and slightly charred, sprinkle crumbled goat cheese over the top and roast for another 5 minutes.
- After taking them out of the oven, drizzle a bit of balsamic vinegar on top.
Notes
Don’t crowd the pan for even roasting. Adjust cooking time for thicker vegetables.
