Instructions
- Preheat your oven to 350°F (175°C).

- Beat in the eggs one at a time, followed by the vanilla extract and pumpkin puree. Mix until smooth.

- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
- Drop dough balls onto a lined baking sheet, leaving space between them. Bake for 12-15 minutes, until edges are golden and centers look set.
- Allow to cool on the baking sheet before transferring to a wire rack.
