Instructions

  3. Beat in the eggs one at a time, followed by the vanilla extract and pumpkin puree. Mix until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, pumpkin spice, espresso powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Drop dough balls onto a lined baking sheet, leaving space between them. Bake for 12-15 minutes, until edges are golden and centers look set.
