- 1 cup Pumpkin Puree
- 1/2 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 1/2 cup Butter, softened
- 2 cups All-Purpose Flour
- 1 tsp Baking Soda
- 2 tsp Pumpkin Spice Mix
- 1 tbsp Instant Coffee
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the egg, vanilla extract, and pumpkin puree.
- In a separate bowl, whisk together the flour, baking soda, and pumpkin spice mix.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Stir in the instant coffee until well mixed.
- Drop tablespoons of dough onto lined baking sheets, leaving space in between.
- Bake for 10-12 minutes until edges are set but centers look soft.
- Let them sit for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, chill the dough for about 30 minutes before baking. Adjust spices to taste.
