Description

Soft and chewy cookies infused with pumpkin, warm spices, and a delightful coffee essence.


Ingredients

  • 1 cup Pumpkin Puree
  • 1/2 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1/2 cup Butter, softened
  • 2 cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 2 tsp Pumpkin Spice Mix
  • 1 tbsp Instant Coffee


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the egg, vanilla extract, and pumpkin puree.
  4. In a separate bowl, whisk together the flour, baking soda, and pumpkin spice mix.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Stir in the instant coffee until well mixed.
  7. Drop tablespoons of dough onto lined baking sheets, leaving space in between.
  8. Bake for 10-12 minutes until edges are set but centers look soft.
  9. Let them sit for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, chill the dough for about 30 minutes before baking. Adjust spices to taste.
