- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ginger
- ½ tsp salt
- 1 cup canned pumpkin puree
- 1 cup sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, spices, and salt.
- In another bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Fold in the chocolate chips.
- Line a muffin tin with paper liners or spray with cooking oil.
- Fill each cup about two-thirds full and bake for 18-20 minutes, or until a toothpick comes out clean.
Notes
Try adding nuts or dried cranberries for variation. These muffins can be frozen for up to three months.
