Description

Delightful pumpkin cheesecake cookies that blend the cozy flavors of pumpkin spice with a creamy cheesecake filling.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 2 tbsp granulated sugar (for filling)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and pumpkin pie spice.
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
  4. Mix in the pumpkin puree, egg, and vanilla until well combined.
  5. Gradually add the dry ingredients into the wet ingredients until just combined.
  6. In a separate bowl, beat together the cream cheese and sugar until smooth for the filling.
  7. Scoop cookie dough onto the baking sheet, make an indent, and fill it with cheesecake filling. Top with another scoop of dough.
  8. Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool before transferring to a wire rack.

Notes

Chill the dough for 30 minutes before baking for better shaping. Use room-temperature ingredients for the filling for easier mixing.
