Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large mixing bowl, blend the pumpkin puree, grated carrots, sugar, and oil until combined.
- Add the eggs one at a time, mixing well after each addition.
- Sift together the flour, baking powder, baking soda, salt, and spices in another bowl.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- If desired, fold in the walnuts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
- For the frosting, beat the cream cheese and butter together until smooth, then gradually add powdered sugar and vanilla, mixing until fluffy.
- Once the cake is cooled, spread the frosting over the top and enjoy!
Notes
For a vegan version, substitute eggs with flaxseed meal and use coconut or almond milk. Consider adding shredded coconut or dried cranberries for variation.
