Description

A moist and flavorful quick bread packed with warm spices, perfect for fall.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup canned pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the flour, baking soda, baking powder, spices, and salt. Whisk to distribute.
  3. In another bowl, mix the pumpkin, brown sugar, eggs, and oil until smooth.
  4. Gradually add the dry mixture to the wet mixture. Stir until just combined, lumps are okay.
  5. Pour the batter into a greased 9×5-inch loaf pan and smooth the top.
  6. Bake for about 60-70 minutes until a toothpick inserted comes out clean.
  7. Let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Store in an airtight container to maintain moisture; it can last up to a week.
