Description

A comforting and satisfying dish featuring tender chicken breasts baked with creamy cheese and fluffy potatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 Yukon Gold or red potatoes, chopped
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C) and chop the potatoes into bite-sized pieces, tossing them with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and sear the chicken breasts, seasoning them with garlic powder and onion powder until golden brown on both sides.
  3. In a bowl, whisk together cream cheese and shredded cheddar until smooth and creamy.
  4. In a baking dish, layer the seared chicken and chopped potatoes, then pour the cheese sauce over the top.
  5. Cover the dish with foil and bake for about 25 minutes, then remove the foil and bake for an additional 10-15 minutes until golden and bubbly.
  6. Let the dish rest for a few minutes before serving.

Notes

For an extra kick, add spicy seasoning or red pepper flakes. Leftovers taste even better the next day!
