- 4 boneless, skinless chicken breasts
- 4 Yukon Gold or red potatoes, chopped
- 1 cup shredded sharp cheddar cheese
- 1/2 cup cream cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and chop the potatoes into bite-sized pieces, tossing them with salt and pepper.
- In a skillet, heat olive oil over medium heat and sear the chicken breasts, seasoning them with garlic powder and onion powder until golden brown on both sides.
- In a bowl, whisk together cream cheese and shredded cheddar until smooth and creamy.
- In a baking dish, layer the seared chicken and chopped potatoes, then pour the cheese sauce over the top.
- Cover the dish with foil and bake for about 25 minutes, then remove the foil and bake for an additional 10-15 minutes until golden and bubbly.
- Let the dish rest for a few minutes before serving.
Notes
For an extra kick, add spicy seasoning or red pepper flakes. Leftovers taste even better the next day!
