Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the unsalted butter, granulated sugar, and brown sugar in a large bowl until fluffy.
- Mix in the ricotta cheese and vanilla extract until just combined.
- In another bowl, whisk together the flour, baking powder, and salt before gradually adding to the wet ingredients.
- Fold in the chopped pistachios until evenly distributed.
- Scoop tablespoon-sized portions onto a lined baking sheet, spaced about an inch apart.
- Bake for 12-15 minutes, or until the edges are light golden brown.
