Description

A creamy and comforting white chicken chili that combines tender chicken, beans, and a blend of spices, perfect for cozy nights.


Ingredients

  • 1 lb Chicken Breast
  • 2 cans Canned White Beans, drained
  • 1-2 Green Chilies, diced
  • 4 cups Chicken Broth
  • 8 oz Cream Cheese, softened
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Oregano
  • 1 Onion, chopped
  • 2 Garlic cloves, minced
  • Salt and Pepper, to taste


Instructions

  1. In a large pot, cook the chicken breast in a bit of olive oil until browned. Remove and shred it.
  2. In the same pot, sauté chopped onion until translucent. Add minced garlic and stir for a minute until fragrant.
  3. Return the shredded chicken to the pot. Add drained white beans, green chilies, and your chicken broth.
  4. Stir in the spices—cumin, paprika, oregano—with salt and pepper. Simmer for about 20 minutes to blend flavors.
  5. Stir in softened cream cheese until melted and creamy.
  6. Taste and adjust spices and seasoning as needed.
  7. Ladle the chili into bowls and serve warm with garnishes like cilantro, lime, or shredded cheese.

Notes

For a dairy-free option, swap cream cheese for a vegan alternative or omit it and use coconut milk. Add extra veggies like bell peppers or corn for more nutrition.
