- 1 lb Chicken Breast
- 2 cans Canned White Beans, drained
- 1-2 Green Chilies, diced
- 4 cups Chicken Broth
- 8 oz Cream Cheese, softened
- 1 tsp Cumin
- 1 tsp Paprika
- 1 tsp Oregano
- 1 Onion, chopped
- 2 Garlic cloves, minced
- Salt and Pepper, to taste
Instructions
- In a large pot, cook the chicken breast in a bit of olive oil until browned. Remove and shred it.
- In the same pot, sauté chopped onion until translucent. Add minced garlic and stir for a minute until fragrant.
- Return the shredded chicken to the pot. Add drained white beans, green chilies, and your chicken broth.
- Stir in the spices—cumin, paprika, oregano—with salt and pepper. Simmer for about 20 minutes to blend flavors.
- Stir in softened cream cheese until melted and creamy.
- Taste and adjust spices and seasoning as needed.
- Ladle the chili into bowls and serve warm with garnishes like cilantro, lime, or shredded cheese.
Notes
For a dairy-free option, swap cream cheese for a vegan alternative or omit it and use coconut milk. Add extra veggies like bell peppers or corn for more nutrition.
