Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs (or 1/2 cup applesauce for vegan option)
  • 2 cups all-purpose flour (or gluten-free flour)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup coconut milk (or regular milk)
  • 1 1/2 cups sweetened shredded coconut
  • 8 oz cream cheese, softened (or dairy-free cream cheese)
  • 2 cups powdered sugar


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish or line with parchment paper.
  3. Cream together softened butter and sugar until light and fluffy. Add eggs (or applesauce) one at a time, mixing well.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, alternating with coconut milk. Stir in shredded coconut.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  6. Mix softened cream cheese and powdered sugar in a bowl until smooth. Add coconut extract if desired.
  7. Spread the cream cheese mixture over the cooled bars.
  8. Sprinkle shredded coconut generously over the frosted layer.
  9. Once set, slice into squares and serve.
