- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup coconut milk (or regular milk)
- 1 1/2 cups sweetened shredded coconut
- 8 oz cream cheese, softened (or dairy-free cream cheese)
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×9-inch baking dish or line with parchment paper.
- Cream together softened butter and sugar until light and fluffy. Add eggs (or applesauce) one at a time, mixing well.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, alternating with coconut milk. Stir in shredded coconut.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- Mix softened cream cheese and powdered sugar in a bowl until smooth. Add coconut extract if desired.
- Spread the cream cheese mixture over the cooled bars.
- Sprinkle shredded coconut generously over the frosted layer.
- Once set, slice into squares and serve.
Notes
For perfectly clean slices, chill the bars after frosting. Customize your coconut type for different flavors.
