- 1 cup fine yellow cornmeal
- 1/2 cup gluten-free flour blend
- 1 tbsp baking powder
- 1 tbsp sugar
- 1 tsp salt
- 1 cup milk (or almond/oat milk)
- 1 large egg
- 1/2 cup chopped onions
- Oil for frying
Instructions
- In a large bowl, whisk together the cornmeal, gluten-free flour blend, baking powder, sugar, and salt until combined.
- In a separate bowl, beat the egg, then add the milk and chopped onions. Stir well until everything’s combined.
- Pour the wet mixture into the dry ingredients and mix until just combined, leaving a few lumps.
- In a deep skillet, heat about two inches of oil over medium heat until it reaches 350°F (175°C).
- Using a spoon or cookie scoop, drop tablespoons of the batter into the hot oil. Fry until golden brown on both sides, about 2-3 minutes per side.
- Drain on paper towels and let them cool slightly before serving with your favorite dipping sauce.
Notes
Avoid overmixing the batter to keep hushpuppies fluffy. Test a small batch before frying the full batch to ensure the oil temperature is correct.
