Description

Delightful Southern-style fritters made primarily from cornmeal, perfect for anyone avoiding gluten.


Ingredients

  • 1 cup fine yellow cornmeal
  • 1/2 cup gluten-free flour blend
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup milk (or almond/oat milk)
  • 1 large egg
  • 1/2 cup chopped onions
  • Oil for frying


Instructions

  1. In a large bowl, whisk together the cornmeal, gluten-free flour blend, baking powder, sugar, and salt until combined.
  2. In a separate bowl, beat the egg, then add the milk and chopped onions. Stir well until everything’s combined.
  3. Pour the wet mixture into the dry ingredients and mix until just combined, leaving a few lumps.
  4. In a deep skillet, heat about two inches of oil over medium heat until it reaches 350°F (175°C).
  5. Using a spoon or cookie scoop, drop tablespoons of the batter into the hot oil. Fry until golden brown on both sides, about 2-3 minutes per side.
  6. Drain on paper towels and let them cool slightly before serving with your favorite dipping sauce.

Notes

Avoid overmixing the batter to keep hushpuppies fluffy. Test a small batch before frying the full batch to ensure the oil temperature is correct.
