- 1 cup peanut butter cups (mini or regular)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- Melt the unsalted butter in a medium saucepan over low heat and let it cool slightly.
- Combine the melted butter with brown sugar and granulated sugar in a bowl and whisk until smooth.
- Beat in the eggs and vanilla extract until fully combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Pour half the blondie batter into the prepared dish and spread it evenly.
- Press the peanut butter cups into the batter, spacing them out evenly.
- Pour the remaining batter over the top and spread it gently to cover the peanut butter cups.
- Bake for 25-30 minutes, until a toothpick inserted comes out with a few moist crumbs.
- Let cool in the pan for a bit, then lift out and cut into squares.
Notes
For a dairy-free version, substitute the butter with coconut oil. Feel free to customize with chocolate chips or nuts.
