Description

These Peanut Butter Cup Stuffed Blondies are a delightful treat combining a soft, chewy blondie base with gooey peanut butter cups. Perfect for any dessert lover!


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup peanut butter cups (mini or regular)


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. Melt the unsalted butter in a medium saucepan over low heat and let it cool slightly.
  3. Combine the melted butter with brown sugar and granulated sugar in a bowl and whisk until smooth.
  4. Beat in the eggs and vanilla extract until fully combined.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  7. Pour half the blondie batter into the prepared dish and spread it evenly.
  8. Press the peanut butter cups into the batter, spacing them out evenly.
  9. Pour the remaining batter over the top and spread it gently to cover the peanut butter cups.
  10. Bake for 25-30 minutes, until a toothpick inserted comes out with a few moist crumbs.
  11. Let cool in the pan for a bit, then lift out and cut into squares.

Notes

For a dairy-free version, substitute the butter with coconut oil. Feel free to customize with chocolate chips or nuts.
