Description

Delicious Peach Pie Cruffins combining flaky pastry with sweet peach filling for a delightful treat.


Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 2 cups fresh peaches, diced
  • 1 teaspoon cinnamon
  • Brown sugar for topping (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin or line it with paper liners.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  4. In another bowl, whisk together the melted butter, eggs, and milk until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix!
  6. In a bowl, mix diced peaches with cinnamon.
  7. Fill each muffin cup halfway with batter, add a spoonful of peach mixture, then top with more batter until just full.
  8. Bake for about 20-25 minutes or until the tops are golden brown.
  9. Let them cool for a few minutes, then enjoy warm or at room temperature.

Notes

Serve warm drizzled with honey or maple syrup for extra sweetness. Pairs beautifully with ice cream or coffee.
