Instructions
- Peel and slice sweet potatoes into medallions about 1/4-inch thick.
- Preheat your oven to 425°F (220°C).
- In a bowl, combine grated Parmesan, garlic powder, oregano, salt, and pepper.
- Toss the sweet potato medallions in olive oil and then in the Parmesan mixture.
- Arrange the coated medallions on a baking sheet lined with parchment paper in a single layer.
- Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
- Let them cool slightly before serving.
