Description

Savory and sweet crispy rounds of sweet potatoes coated in herbs and Parmesan cheese, perfect as a delightful side dish.


Ingredients

  • 2 medium-sized sweet potatoes
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Peel and slice sweet potatoes into medallions about 1/4-inch thick.
  2. Preheat your oven to 425°F (220°C).
  3. In a bowl, combine grated Parmesan, garlic powder, oregano, salt, and pepper.
  4. Toss the sweet potato medallions in olive oil and then in the Parmesan mixture.
  5. Arrange the coated medallions on a baking sheet lined with parchment paper in a single layer.
  6. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
  7. Let them cool slightly before serving.
