Description

Crispy on the outside and flaky on the inside, Parmesan crusted cod is a delightful fish dish coated with a savory mixture of Parmesan cheese, breadcrumbs, and herbs.


Ingredients

  • 4 Cod Fillets
  • 1 cup Grated Parmesan Cheese
  • 1 cup Breadcrumbs (plain or Italian)
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley, chopped
  • 1 tablespoon Fresh Thyme, chopped
  • 1 teaspoon Garlic Powder
  • 2 tablespoons Lemon Juice
  • Salt and Pepper, to taste


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine Parmesan cheese, breadcrumbs, olive oil, herbs, and garlic powder until well mixed.
  3. Pat the cod fillets dry with paper towels, then drizzle with lemon juice and sprinkle lightly with salt and pepper.
  4. Press the breadcrumb mixture onto each fillet, making sure to cover them well.
  5. Place the coated fillets on the prepared baking sheet and bake for about 15-20 minutes, or until the fish flakes easily with a fork.
  6. Let the fillets rest for a few minutes before serving with extra lemon wedges.

Notes

For a gluten-free option, use gluten-free breadcrumbs. Feel free to experiment with different herbs based on your taste.
