- 4 Cod Fillets
- 1 cup Grated Parmesan Cheese
- 1 cup Breadcrumbs (plain or Italian)
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley, chopped
- 1 tablespoon Fresh Thyme, chopped
- 1 teaspoon Garlic Powder
- 2 tablespoons Lemon Juice
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine Parmesan cheese, breadcrumbs, olive oil, herbs, and garlic powder until well mixed.
- Pat the cod fillets dry with paper towels, then drizzle with lemon juice and sprinkle lightly with salt and pepper.
- Press the breadcrumb mixture onto each fillet, making sure to cover them well.
- Place the coated fillets on the prepared baking sheet and bake for about 15-20 minutes, or until the fish flakes easily with a fork.
- Let the fillets rest for a few minutes before serving with extra lemon wedges.
Notes
For a gluten-free option, use gluten-free breadcrumbs. Feel free to experiment with different herbs based on your taste.
