Delicious Oreo cheesecake cookie cups with a creamy cheesecake filling nestled in a crunchy cookie crust.

- 20 Oreos, crushed (for the crust and filling)
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour
- 1 large egg
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin with cooking spray or line with paper liners.
- In a bowl, beat together softened butter and powdered sugar until creamy. Mix in the egg and vanilla extract.
- Gradually add in the flour and crushed Oreos until a dough forms.
- Press a spoonful of dough into the bottom and up the sides of each muffin cup.
- Bake for 10-12 minutes or until golden and set. Let them cool slightly.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually mix in powdered sugar and fold in crushed Oreos.
- Spoon the cheesecake filling into the cooled cookie cups. Top with more crushed Oreos if desired.
- Refrigerate for at least an hour to set.
Notes
Chill them overnight for best flavor. Experiment with Oreo flavors for a twist.
