Description

A creamy, dreamy blend of butter beans, sautéed vegetables, and spices, all cooked in one pot for a comforting and hearty meal.


Ingredients

  • 2 cups butter beans
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Add the diced tomatoes and stir everything together for about 3 minutes.
  4. Gently mix in the butter beans and pour in the vegetable broth. Stir to combine all the flavors.
  5. Season with salt, pepper, and any additional herbs. Let the mixture simmer for about 15 minutes.
  6. In the last few minutes, fold in the spinach and let it wilt.
  7. Check for seasoning and adjust if necessary.
