- 2 cups butter beans
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 can diced tomatoes
- 2 cups fresh spinach
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and sauté for another minute until fragrant.
- Add the diced tomatoes and stir everything together for about 3 minutes.
- Gently mix in the butter beans and pour in the vegetable broth. Stir to combine all the flavors.
- Season with salt, pepper, and any additional herbs. Let the mixture simmer for about 15 minutes.
- In the last few minutes, fold in the spinach and let it wilt.
- Check for seasoning and adjust if necessary.
- Serve and enjoy!
