- 1 Onion (chopped)
- 3 cloves Garlic (minced)
- 1 Bell Pepper (chopped)
- 1 cup Heavy Cream (or coconut milk)
- 2 tbsp Cajun Seasoning
- 4 cups Chicken Broth (or vegetable broth)
- 1/2 cup Parmesan Cheese (freshly grated)
Instructions
- In a large pot over medium heat, brown the sausage until cooked through, breaking it up with a wooden spoon.
- Add onion and bell peppers, sauté until soft, about 3-4 minutes.
- Toss in garlic and sauté for another minute until fragrant.
- Stir in Cajun seasoning and pasta, followed by chicken broth. Bring to a simmer.
- Once the pasta is nearly cooked, reduce heat and add heavy cream, stirring to create a creamy sauce.
- Sprinkle in Parmesan cheese, mix well, and let it melt into the dish.
- Garnish with fresh parsley if desired, then serve.
