Ingredients

  • Pasta (penne or rotini)
  • Italian Sausage (pork, turkey, or plant-based)
  • 1 Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 Bell Pepper (chopped)
  • 1 cup Heavy Cream (or coconut milk)
  • 2 tbsp Cajun Seasoning
  • 4 cups Chicken Broth (or vegetable broth)
  • 1/2 cup Parmesan Cheese (freshly grated)


Instructions

  1. In a large pot over medium heat, brown the sausage until cooked through, breaking it up with a wooden spoon.
  2. Add onion and bell peppers, sauté until soft, about 3-4 minutes.
  3. Toss in garlic and sauté for another minute until fragrant.
  4. Stir in Cajun seasoning and pasta, followed by chicken broth. Bring to a simmer.
  5. Once the pasta is nearly cooked, reduce heat and add heavy cream, stirring to create a creamy sauce.
  6. Sprinkle in Parmesan cheese, mix well, and let it melt into the dish.
  7. Garnish with fresh parsley if desired, then serve.
