Description

A delightful dish that combines the rich flavors of Cajun cuisine with creamy pasta, perfect for busy weeknights.


Ingredients

  • Pasta (penne, fettuccine, or whole wheat)
  • 2 tablespoons Olive Oil
  • 1 pound Chicken Breast or Shrimp, diced
  • 1 Bell Pepper, diced
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Cajun Seasoning
  • 4 cups Chicken Broth (or vegetable broth)
  • 1 cup Heavy Cream
  • ½ cup Parmesan Cheese, grated (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and bell peppers. Sauté until softened, about 5 minutes.
  2. Add minced garlic, then add diced chicken (or shrimp). Cook until the chicken is no longer pink, about 7-10 minutes.
  3. Pour in pasta and Cajun seasoning, stirring until everything is combined.
  4. Add chicken broth to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook until pasta is tender, around 15 minutes.
  5. Stir in heavy cream and let it simmer for another couple of minutes until creamy.
  6. Taste for seasoning, adjust if needed, and serve warm, topped with grated Parmesan cheese.

Notes

Don’t overcook the pasta; it should be al dente. Adjust the spice level as needed.
