- Pasta (penne, fettuccine, or whole wheat)
- 2 tablespoons Olive Oil
- 1 pound Chicken Breast or Shrimp, diced
- 1 Bell Pepper, diced
- 1 Onion, diced
- 3 cloves Garlic, minced
- 2 tablespoons Cajun Seasoning
- 4 cups Chicken Broth (or vegetable broth)
- 1 cup Heavy Cream
- ½ cup Parmesan Cheese, grated (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and bell peppers. Sauté until softened, about 5 minutes.
- Add minced garlic, then add diced chicken (or shrimp). Cook until the chicken is no longer pink, about 7-10 minutes.
- Pour in pasta and Cajun seasoning, stirring until everything is combined.
- Add chicken broth to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook until pasta is tender, around 15 minutes.
- Stir in heavy cream and let it simmer for another couple of minutes until creamy.
- Taste for seasoning, adjust if needed, and serve warm, topped with grated Parmesan cheese.
Notes
Don’t overcook the pasta; it should be al dente. Adjust the spice level as needed.
